Talk&Taste: An ode to tea

Explore the nuances of tea with François-Xavier Delmas, sommelier, researcher, and founder of Palais des Thés.

Tea is more than a beverage; it is a lens through which landscapes, histories, and human imagination converge. The celebrated 'Dictionnaires amoureux' series welcomes a new volume devoted entirely to tea in all its splendour.


In the 'Dictionnaire amoureux du thé' (PLON, 2025), François-Xavier Delmas, founder of Palais des Thés, moves from Japan to Malawi, from the remote valleys of China to the Açores, following leaves, vapours, and rituals. Each brew becomes a way of reading seasons, soils, and centuries of craft.


The event will open with a cold brew tasting led by François-Xavier Delmas, setting both palate and mind. The conversation that will follow will trace the many roads of tea — its complexities, its subtleties, and its ability to hold tasting, emotion, intimacy, and sociability, all touched by a quiet reverie that extends to the objects around it.

François-Xavier Delmas

François-Xavier Delmas discovered tea by accident at 24 and has since devoted his life to exploring its flavours, cultures, and crafts. He co-founded Palais des Thés in Paris and spends much of the year travelling through Nepal, India, China, and Japan, tasting hundreds of teas to select the finest harvests. Through his blog Discovering Tea and books including The Tea Drinker’s Handbook and Tea Sommelier, he shares not only the technical knowledge of tea but also the stories of the people, places, and rituals behind each leaf. Even after decades, he approaches tea with curiosity and humility, continually learning from the leaves and those who cultivate them. In 2025, he published 'Le Dictionnaire amoureux du thé'.

Axelle Thiry is the presenter and programmer of the programmes ‘Scandales!’ and ‘La note belge’ on Musiq3. Previously, she presented and programmed the programmes “Voyages” and ‘A portée de mots’, also on Musiq3. Since 2026, she has also been writing a literary column in Musiq3's new Grand matinée programme. She also produces podcasts on composers such as Maurice Ravel and, more recently, Erik Satie.
