A tasting experience at the Chef’s table where the act of cooking becomes music, and every gesture tells a story.

In an unprecedented encounter between gastronomy and music, two-Michelin-star chef Pascal Devalkeneer and organic-music producer Cøpal join forces for a live creation, blending cooking and sound.


Guests will gather around the chef’s table at ökēn Cocktail Bar to taste the dish as it comes to life, accompanied by a carefully paired cocktail that complements and enhances the flavours.


Guided by the impulse and voice of Diane Marois, this experience explores a space where cooking becomes sonic material — where every gesture, every breath, and every season shapes the melody.


Cøpal will capture the sounds of the chef at work — the fire, the knife, the breath of the ingredient — transforming them into musical textures. Diane will give voice to the chef’s thoughts, nourished by nature, memory, and creation, as Pascal composes a one-off dish revealed only that evening.


A three-way co-creation where cuisine becomes music, music becomes narrative, and every tasting moment resonates with nature’s heartbeat.


Price includes the tasting experience and a curated cocktail pairing.

Pascal Devalkeneer

Pascal Devalkeneer is one of the most subtle Belgian chefs of his generation, a discreet but essential figure in haute cuisine. At the helm of the Chalet de la Forêt in Brussels, which has two Michelin stars, he has been developing a cuisine that is refined, plant-based and deeply rooted in the Belgian terroir for more than twenty years.
