Led by Ökēn Manager Jonathan Verbois, this immersive workshop will introduce you to the core principles of mixology.

Together, you’ll be guided through the creation of two iconic drinks, reimagined for the occasion:

  • Americano — a timeless and refined classic, where gentle bitterness meets sparkling freshness for an effortlessly elegant aperitif.
  • Ginger Snap — a bright and spicy mocktail, blending warm ginger notes with a crisp snap of freshness for a lively, feel-good experience.

Along the way, you’ll explore the essential techniques behind every great drink, with hands-on interaction, expert insights, and tips to recreate these recipes at home—whether with or without alcohol.

Jonathan Verbois

What began as a temporary move — applying for a job in a cocktail bar in Saint-Gilles — quickly became the start of a true vocation. A food enthusiast with four years of experience in hospitality as a student, he immediately recognised mixology as a natural extension of his passion for culinary creativity. After a year behind the bar, he pursued advanced training in Toronto, sharpening his technique and deepening his understanding of flavour, balance, and craft. Upon returning to Brussels, he managed the very bar where he had learned his foundations, before joining the Ökēn project from day one. Today, he is the mixologist and Operational Manager at Ökēn, where he continues to push boundaries, refine his approach, and share his vision of cocktails as an immersive, sensorial experience.
