Join us for a workshop on the art of the Galette des Rois, in collaboration with GRAIN Bakery and Victoria Depré. Through her expertise and guidance, you will be guided in the making of your own Galette.

Founded in 2019, Grain Bakery began as a small neighborhood bakery near Place du Châtelain, born from a deep respect for craft, time, and quality. Behind the project is Paul-Antoine Bertin, known as Polo—a Brussels-based chef and entrepreneur whose culinary universe also includes RakiÖtapStudio 27, and Rebel.

What started as an intimate local address has since grown organically. With new bakeries opening near Place Flagey and on Chaussée de Charleroi, Grain has evolved into a living, breathing collective shaped by passion and precision. Today, the bakery is carried daily by a team of four dedicated artisans, united by a shared commitment to honest ingredients, traditional techniques, and thoughtful execution.

At the heart of Grain’s evolution is Victoria Depré. A former chef who found her calling in baking, she took over the ovens in 2021 and quickly became an essential force behind the project. Over time, her vision and dedication helped shape Grain’s growth, leading her to become a partner alongside Polo with the opening of the two new locations. Together with the team, Victoria defends an artisan approach to baking, where quality prevails over quantity, and where each pastry is imagined and crafted to offer comfort, generosity, and authenticity.

Spaces are limited — an intimate gathering for those who value the luxury of slow time, thoughtful conversation, and the timeless beauty of handmade creation.
