In this dialogue, Michelin-starred chef San Degeimbre joins philosopher and journalist Simon Brunfaut for a wide-ranging conversation on the cultural, ecological, and existential dimensions of cuisine.


Together, they will explore a series of questions at the crossroads of gastronomy and thought: Is the chef a craftsman, an artist, or a messenger? How do we cook and eat ethically in a time of ecological urgency? What does it mean to cultivate beauty, slowness, and memory in a world obsessed with speed and efficiency? San Degeimbre is a Korean-born, Belgian chef and the founder of L’Air du Temps, a two-Michelin-star restaurant located on a five-hectare farm in Liernu. Widely celebrated for his pioneering approach to fermentation, sustainability, and garden-to-table gastronomy, Degeimbre merges scientific precision with poetic intuition. His cuisine draws from both Korean techniques and Belgian terroir, creating a style that is both rooted and transcultural. Beyond the kitchen, he is a committed voice for ecological awareness, biodiversity, and culinary ethics.
